You already have some theme(s) selected for your site. And have mentioned most other aspects that need addressing. But i am not if you wrote the spec up as a new build or and upgrade, the solution's approach is slightly different. You have also not mentioned your DR AND BACKUP requirements.. This too plays a role in configuring your site.
