you have enough server there for a lot more than 2 boxes even giving them generous resources individually .... I would suggest virtualization either with proxmox or vmware instead of dual booting as it will be easier to keep the containers separated ... but i can manage it with whatever you decide to use ... is this a local or remote machine? if remote it might need some ip addresses assigned to each box or you will need some ports to be mapped/forwarded I put 2 days in case of problems but really i could probably have it done in less than a day
