We have Linux Cent OS servers running Asterisk to handle international phone calls which need to be assessed and properly secured.
We have noticed probing from untrusted IP address. Our calls are routed to us from our own SIP Gateways (though sometimes we bypass this and go straight from the SIP provider) so we should be able to accomplish this.
We're open to using tools like Fail2Ban and Snort, depending on your suggestions. The important thing is that we use a system that's easy to understand and maintain and provides good notification.

1) Securing of one of our test server
2) Creation of a well-commented script which automates the steps that you took in securing the server. This is very important because we'll use this script to secure other servers as they come online.
