The ID-based renaming and folder mirroring is the tricky bit since most scrapers just dump everything flat. I'd build you a Python script using BeautifulSoup and requests that parses the site structure, pulls every image with its unique ID from the HTML attributes or URL patterns, then recreates the exact folder hierarchy locally. Images get renamed to their IDs automatically, text gets exported to JSON or CSV depending on what's easier for you to work with later.
