Java Process Using Excess Memory, Need Troubleshoot and Fix

I am trying to run java applications on my server. I am experiencing excessive memory usage from these applications, much more than what should be used. This forces the jvm to use swap space when there should only be around 5gb of memory being used.

See image below, this is with only 5 clients open and 23gb of memory is used, but task manager only shows around 5gb being used; this is how much SHOULD get used.

This is on an UBUNTU server. I will provide VNC details for you to troubleshoot this yourself. Let me know if you have any questions.
