Transfer my Wordpress website from one theme to another

I want to change the theme of my Wordpress website from one theme template to another.
There is a lot of data that must be transfered too!
My old theme uses other data fields than my new one which means that all the information has to be transfered to the according new data field.
E.g. in my old template I have to implement videos as photos, but in my new template videos are portfolio items - with totally different data fields.
I could handle all this manually, but this would be a lot work and will lasts a week or so...
Therefore I'm looking for someone who is able to:
- write a mysql tool to transfer all the data
- transfer all the data on a test system from my old to the new template (you should have a test server with Wordpress/MySql!)
- show this to me on the test server, before we do it on my running website
- transfer the data on my running website within some hours (not days!)

You should have done similar projects before and should be able to show me one/some of them.

I think it would be much easier and safer to simply tweak the new template so it can display the existent extra fields instead of the other way around...
