Oscommerce Modification or Possible Web System

Hi,
I am using OS Commerce to try and build a store with about 5 products for a martial arts company. The main products at the moment are a junior competition ticket and a senior competition ticket.
The principle is that each tae-kwon-do instructor goes on-line and enters in their students. They choose the product (i.e. if they are junior or senior). Then they select the options such as male or female etc.... At the moment I am having difficulty to shape the product into the requirements that is needed.
Example of how it is at the moment;
Junior Competition
- Events Sparring
- Grade Red
- Sex Male

I would like to add the student name, sex, grade, weight, school; events (the more events you enter cost more money) and team events.
How I would like it;
Junior Competition
- Name – John Doe
- Sex – Male
- Grade - Blue
- Weight - <45kg
- School – Brighton
- Events – Sparring (£5) & Pattern (£5)
- Team Events – Sparring (£3)
Total £13
The other alternative is not to us oscommerce and use a custom built web system.....
Please qoute for both options (oscommerce majorly prefered).
