Watir on Headless Server

Was to implement a Watir Headless Server on a Ubuntu server. This is a headless server on EC2.
I want this Watir to test open a URL in iPhone 11 dimension and run Watir tests. No need to implement tests, just the mechanism to run Watir on a Headless Server in a specific dimension (iPhone 11) and report success or error.
Required Deliveries:
- Step by step on how to install and setup Watir on a headless Ubuntu server.
- Step by step on how to run a Watir test on this server on a simple website. (choose any website and show how test runs and returns success or error).
NOTE: if there is another easier testing tool that runs on a Headless Server to test Websites in iPhone dimensions, I'm happy to do that instead too.

If it's testing a website then I've used the selenium however, I should say I haven't tested as an ios device(iPhone 11) but only as a desktop. I know the basic principles of selenium testing and there is a headless Plus
