Hello, I hope to find you in the best of your times. Regarding your current project requirements, the disk image of your two drives can be taken as two separate images only. To do that you will be needing a live bootable USB (to boot your machine from) and storage device (External HDD perhaps) to write the drive images to. These images can then be restored on a new system having two drives. But if you want these two drives to be restored on a single physical drive (as a single drive) then let me know and I will derive a solution accordingly. I can help you in setting up the live USB with remote access support through which I could remotely connect and do this task for you.
