Signal processing for ultrasonic waves

My project is to use signals from multiple TR to understand what is happening with respect to motion. Ultrasound can provide distance and speed but I was interested in gaining more information from several transmissions and receipts. Including object recognition and direction of movement. I have worked a little with FFT. Can ultrasound differentiate an object by the reduction in amplitude because some of the wave was absorbed? And can ultrasound tell me the direction of speed by doppler shift. I play to have 3 TR, each 80 degree FOV and spaced on angles to cover an overlapping path.
