First thing I'd do is pull the current Terraform state and pipeline definitions apart from the app code, because half the AKS and Helm setups I've seen break because the IaC and the deploy logic live in the same YAML and nobody can gate one without touching the other. Separating those cleanly is what makes the security and compliance gates actually enforceable instead of decorative. My hands-on time splits between OpenTofu for infra provisioning and running a Docker fleet on Proxmox, so the AKS and Helm side maps onto operations work I already do daily, not something I'd be learning on your dime. Azure DevOps pipelines with staged approvals, policy checks ahead of a release gate, and Helm values scoped per environment are the same shape as what I run now, just on a different orchestrator.
