A typed PDF can look perfect and still copy out wrong. Many PDFs set fi and fl as one joined character, and in some files it comes out as an odd symbol or nothing at all, so 'office' can land in Excel as 'oce'. The PDF looks fine, so nobody suspects the text. So I pull the text with a Python script, not copy and paste, and fix what the text layer gets wrong: joined letters, words split by a line-end hyphen, page numbers and headers inside paragraphs, and two-column pages read out of order. Then each page is compared with a separate OCR read of the page image, used only as a cross-check, and I look at every difference by eye. That covers the pages you won't spot-check too.
