About the car physics there are several packages in the asset store, there's one in particular that handles many car parameteres and even crash deformation. I have recently been experimenting with Unity, which seems to be very easy to make content in. Overall I am more oriented toward using my own engine Razor which I made from OpenGL, SDL, and the Bullet physics library. With my experience so close to the machine level, it should be very straightforward to make a Unity game, especially with only what you mentioned in the description. High-definition models for physics and rendering will be the most time-consuming aspect, most game logic will be rather simple to implement.
