For the MCU, I’d consider nRF52840 vs ESP32-S3. nRF52840 is my first choice for a keyboard because of its excellent BLE performance, very low power consumption, and native USB. ESP32-S3 is also a strong option if you want more processing power and features, with native USB and Bluetooth/Wi-Fi.
