Design a food cart on a mini pickup

I'm looking for a customised mini food-cart for box-meal delivery. Type of vehicle will be a Piaggio Ape or similar. A few photos of a european streetfood vendor attached for ref to give a better idea of my requirement. I am looking for a similar structure and functionality and there wont be any live-cooking within the vehicle. However, a provision for an induction cook-top will be desirable Here are the list of high level requirements for vehicle customisation. Must be easy to clean Side Body rectangular box type with manual lift-up 7 Ft Side Body - two side open with hydraulic strut. Third side will be static and permanently closed. Sliding-out counter table with glass display. Maximum Storage space Foot Step to step in and out Water tank - 20L or more based on space availability above the driver's cabin One Water faucet/tap Roof Heat Sealing I'm looking to see CAD Drawings, Electrical and plumbing designs, Bill of materials and an estimate of the cost of material and labour involved.
