Advice on migrating away from SBS 2003

Job Description:
We have a 2003 SBS Server and we are looking for advice on migrating away from it. We want to see should we stick with Microsoft Servers or move to Linux Server or NAS. Want to see how to check if RAID 1 is configured on the server and if so, how to check that it is working ok. Want to see where the Exchange Server Information Store is kept. Also, want some advice on cloning the disk that is in the server. As a separate project we might look at restarting the backups which don’t seem to be working at present. They had been working using Symantec Backup. We can give you access to view the server through one of our PCs using teamviewer and Remote Desktop. We have a 2MB connection so that is not a problem.
